Homemade spring rolls of my childhood

Spring rolls recipe
Ingredients for 6 people
- 1 batavia
- 1 bunch of mint
- rice paper or rice cakes
- 3 bundles of wheat vermicelli
- 400g chicken fillets
- 250g of shrimps
- 5 eggs
- Butter or cooking oil
- For the marinade :
o Fish sauce
o Soy sauce
o Garlic
o Sesame oil
- For the sauce :
o Water
o White vinegar
o Sugar
o Fish sauce
Soak the lettuce and mint.
Prepare the marinade for the chicken in a salad bowl:
- 3 tablespoons of fish sauce
- 3 tablespoons of soy sauce
- 1 clove garlic, crushed
Mix together.
Chop the chicken and add to the marinade.
Add 3 tablespoons of sesame oil and mix.
Let marinate.
Break eggs into a bowl and whisk.
Heat a frying pan over medium heat and melt a little butter (or cooking oil).
Cook 2 fairly thin omelettes.
Prepare the sauce in a saucepan:
- 4 parts water
- 1 part sugar (white or brown)
- 1 part fish sauce (nuoc mam)
- 1 dose of white vinegar
- 2 cloves of garlic, crushed
Mix and heat over low heat.
Prepare the wheat vermicelli:
- Boil water in a saucepan
- Add the bundles of vermicelli
- Stir from time to time so that they cook evenly
- Cook as indicated on the package (5 minutes for me)
- Drain and rinse with cold water
Cook the chicken meat
- Heat a large frying pan and pour in a little cooking oil
- Add the minced and marinated chicken
- Brown the pieces
- Set aside
Prepare the shrimp (use gloves if you prefer):
- Peel the shells
- Devein
- Cut in 2 lengthwise (forgotten in the video :) )
Remove the mint leaves and spin-dry the salad.
Roll the omelets and cut them into strips.
Cut the chicken into strips.
Prepare all ingredients on the work surface (or directly on the table).
Moisten a tea towel and place it on a cutting board.
Put warm water in a large bowl.
Soak a sheet of rice in it.
Lay it flat on the cloth.
Place :
- 3 shrimps
- a leaf of salad (I remove the base too hard)
- vermicelli
- a few strips of chicken
- a few strips of omelette
- 2 mint leaves
Roll up the whole and fold the 2 sides halfway. Finish rolling.
Dip into the sauce and enjoy.
